Organically grown vegetables in their natural state, non-processed, fresh and full of vitamins and minerals, or any other raw food should be better for you. But, some are difficult to digest.

So, many people eat raw. There are some obvious dangers of cooked foods, especially when it comes to over-cooking. Killing valuable substances cannot be good. Killing bad bacteria and parasites in meat is obviously good. So, the answer to previously mentioned questions isn't easy. In any case, the best thing to do would be finding the right balance.

Lately, it's quite popular to eat raw because it is a good way for losing weight. Vegetables don't have many calories, and, in their raw state, you cannot eat so much. When you cook them, it is possible to consume more, and, in this case, you will probably have to eat much more to get the same amount of nutritive substances.

Some vitamins are sensitive to heat, and some aren't. One of the most valuable anti-oxidants, vitamin C gets destroyed by the temperature above 60 degrees Celsius. The point is, when you cook something that contains vitamin C, you basically destroy it. Some other vitamins will survive, but they can still become less effective. Overcooking, on the other hand, will not only destroy everything but also might be dangerous.

Enzymes are quite important for your organism, and they get destroyed by heat. On the other hand, beta-carotene needs heating to become valuable for you. Some grains and legumes are better and easier to digest after cooking, or at least after steaming. Steaming, by the way, is a very good alternative to baking and cooking, in any case.

When it comes to fruits, you should certainly avoid cooking, or steaming or any other food processing. They are the best in their raw state. Of course, if you enjoy in marmalade, make it. Simply slice your fruits, add sugar and leave this mixture rest. After that, cook on low heat for a couple of minutes and that's it. This will save most valuable ingredients intact.

There are some other ways of preparing and preserving your food, for example fermenting. Sauerkraut is healthy, tasty and doesn't require heating. Dry or steamed foods are a far better option. Of course, organically grown is better than other types of vegetables, fruits or grains, in their natural state or prepared by steaming or cooked over low heat. They bring live energy into your organism.

There are some types of compounds that get altered by cooking and become dangerous for human health, or even carcinogenic. Overcooking is probably the main reason for different allergies today, at least this is something many experts say. Find the right balance, and eat as many fresh foods as you can, and cook using low heat and steaming. Think about what you eat and you will live longer and healthier.
